Chocolate Coconut Sunchoke


  • 1 1/2 oz swiss chard
  • 2 bananas - peeled
  • 1.5 oz sunchokes
  • 1 1/2 tbsp cacao powder
  • 2 tbsp coconut flakes
  • 1 cup coconut water
  • 1 cup ice

Looking like a cross between a potato and a piece of ginger, sunchokes don’t actually need to be peeled. Simply clean them with a soapy sponge, rinse, and chop. Rich in fiber, iron and potassium, sunchokes are low on the glycemic index, which means they won’t spike blood sugar. And the taste? When raw, it’s a crisp, slightly nutty flavor that makes a perfect smoothie base along with bananas. (Want a lower sugar option? Consider swapping the bananas for yellow squash, or even avocado to keep the creaminess factor.) Cacao is a great anti-inflammatory that packs lots of chocolatey flavor without additional sugar, and coconut flakes have iron, protein and healthy fats.
