Persimmon Jack O’Lantern Smoothie Recipe


  • 5 oz butternut squash
  • 1 persimmon - topped
  • 1 pear - chopped
  • 1 tsp pumpkin pie spice
  • 1 tbsp pumpkin seeds
  • 1 cup water
  • 1 cup ice

Because of its starchy quality and mild taste, butternut squash makes a nice and thick smoothie base. In addition to the beta carotene and fiber from both the butternut squash and persimmon (which is fantastic for your skin), there’s more fiber in this smoothie courtesy of a pear, healthy fat from pumpkin seeds, and anti-inflammatory power from the pumpkin pie spice. The best part about this pie-in-a-glass? It’s low in calories, fat and sugar!
