Carrot Maple Rhubarb Smoothie Recipe


  • 5 oz carrots - chopped
  • 2 oz rhubarb - chopped
  • 1 apple - chopped
  • 3 tbsp walnuts
  • 2 tbsp maple syrup
  • 1 cup water
  • 1 cup ice

Carrots have some of the highest amounts of beta carotene per serving; with one medium-sized carrot providing almost an entire day’s worth of the carotenoid. Walnuts are full of healthy fats and protein, as well as vitamin E, which, like beta-carotene, is a fantastic vitamin for skin. Thanks to an apple, rhubarb and maple syrup, this skin-loving smoothie also contains energy-producing iron and fiber, making it the perfect pre-workout or morning snack.
